Jamaican Pika

This Caribbean pepper is famous for being the hottest chile pepper in the world. They come in a variety of shapes and colors(yellow, orange,green, red,chocolate). Not only are they extremely hot, but they also have a unique,distinctively fruity flavor.

It is the key ingredient in the popular Jamaican Jerk sauce. The habanero is also widely used in many different types of hot sauces. The popularity of this chile pepper continues to grow and is becoming easier to find on the grocery shelf.

Ingredients:

1 large white onion, sliced
2 Scotch bonnet peppers (or substitute habanero), seeds and stems removed, minced
1 tsp. ground allspice
1 carrot, sliced in circles
1-1/2 cups distilled vinegar
1/2 cup water
1 clove garlic, minced
pinch of salt

Instructions:

Combine all the ingredients in a jar or bowl and let stand for at least 2 hours. This mixture is incredible with freshly roasted and grilled meats, poultry and seafood.

Yields 2-1/2 cups.
