Jamaican Jerk Sauce

This Caribbean pepper is famous for being the hottest chile pepper in the world. They come in a variety of shapes and colors(yellow, orange,green, red,chocolate). Not only are they extremely hot, but they also have a unique,distinctively fruity flavor.

It is the key ingredient in the popular Jamaican Jerk sauce. The habanero is also widely used in many different types of hot sauces. The popularity of this chile pepper continues to grow and is becoming easier to find on the grocery shelf.

Ingredients:

1 scotch bonnet (habanero) pepper, halved and seeded
2 scallions, sliced into 2-inch lengths
1 1/2 tsp garlic, peeled (about 3 cloves)
3 Tbsp ginger, freshly grated (one 2-inch piece)
4 sprigs thyme, fresh and minced
1 Tbsp allspice berry, ground in a coffee mill (or 2 tsp dried)
juice of 2 limes
1/2 cup ketchup
1/2 cup pineapple juice (or 1/2 cup of tomato juice)

Instructions:

In the bowl of a food processor or a blender, process the scotch bonnet pepper, scallions, garlic, ginger, and thyme leaves until finely ground.

Add the allspice, lime juice, ketchup, and pineapple juice and puree the mixture for 30 seconds, until well combined.

Makes 2 cups.
