Israeli Salad with Goat Cheese

BellaFina™ peppers may be used to create a wide variety of recipes, from appetizers to main dishes. BellaFina peppers are often used in salads, vegetables trays with or without dip, cooked in stews and sauces and stuffed with meat, cheese and grains.

Grown on the vine in the field, BellaFina peppers are a great source of vitamins and nutrients. They are low calorie, fat free, sodium free and high in Vitamin C.

5 cocktail tomatoes or 2 large tomatoes
1 English cucumber
2-3 yellow Bellafina peppers
2-3 red Bellafina peppers
½ cup parsley, chopped
¼ cup mint, chopped
1 cup goat cheese, crumbled
½ cup pomegranate seeds
zest from one lemon
juice from one lemon
2 tbsp olive oil
salt and pepper to taste


Chop all the ingredients into very small pieces. Place all the ingredients in a large bowl together with the olive oil, zest and lemon juice and toss. Season with salt and pepper.
