Imli Chatni (Indian Tamarind Sauce)

Ingredients:
2 Tbsp. tamarind pulp
1-1/4 cups water
1/2 cup rasins
1/4 cup dates
1/2 cup brown sugar
1-1/2 tsp. ground cumin
1 tsp. ground ginger
1/2 tsp. cayenne
1 tsp. garam masala
2 tsp. salt or to taste
Instructions:
Soak the tamarind pulp in the water for about 15 minutes, then mash it into the water to dissolve the pulp. Strain the tamarind water through a sieve to get out any of the fibers and seeds.
Mix the tamarind water with the raisins, dates and all the spices, then puree the mixture in a blender.
Gently heat the sauce when ready to serve. This is particularly good served over shrimp dishes.
