Huevos Ranchers II
This chile pepper gets its name from its origin. In Spanish, serrano is an adjective meaning “from the mountains” which is where it originated-in the mountains of Hildalgo, Mexico. The serrano is normally about twice as hot as Jalapeno (about 10,000 to 15,000 Scoville units).It is the second most popular chile pepper in Mexico. This chile is used mostly for salsas but can also be used in soups, sauces, chili or stews.Try these as a hotter substitute for Jalapeno.

Ingredients
Salsa Ranchera
600 grams/21 oz tomatoes – cherry
190 grams/7 oz bell peppers – red (1 medium pepper)
170 grams onion/ 6 oz (1 small onion) cut into 4 slices
70 grams/2 1/2 oz green chili – mild (such as anaheim or poblano)
20 grams/.7 oz green chili – hot (such as serrano)
17 grams/.6 oz garlic (2 large cloves)
3/4 teaspoons salt

4 corn tortillas
6 small eggs – sunny side up
refried beans
Cotija cheese for garnish
cilantro for garnish
Instructions
Put the oven rack in the middle position and preheat to 450 F (230 C).
Poke holes in the tomatoes with a toothpick to keep them from exploding in the oven. Salsa Ranchera Recipe
Put the tomatoes, bell pepper, mild green chiles, hot green chiles, and garlic on a baking sheet and put them in the oven. Roast until everything is slightly charred on top. Making Ranchera Sauce
Remove the stems and seeds along with some of the skin from the chiles and add to a blender or food processor along with the rest of the vegetables and any juices that have collected in the pan. Add the salt and blend until smooth. If your sauce is too thick, you can add a bit of water to thin it out. Salsa Ranchera for Huevos Rancheros

Fry both sides of each tortilla in some oil until crisp around the edges, but still soft in the center.
To assemble your Huevos Rancheros, spread a layer of refried beans on two plates. Top with 2 tortillas and then pour some ranchera sauce on top. Top with the eggs, some more ranchera sauce and then garnish with crumbled cotija cheese and cilantro.
