Hot Chicken Wing Deviled Eggs

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

  • 1 dozen eggs hard-boiled, peeled.
  • 1/2 cup shredded fully cooked
  • 3 tablespoons mayo
  • 2 teaspoons finely chopped jalapeno
  • Sriracha Sauce
  • Salt/Pepper
  • Paprika

Directions:

  1. Cut each hard-boiled and peeled egg in half remove yolks place in a small bowl. Place halved eggs in the fridge to chill while you create the filling.
  2. Mash the egg yolks
  3. Mix mayo, shredded chicken, jalapeno to egg yolk and blend completely.
  4. Add Sriracha to your desired heat (I like them hot so I use at least a tablespoon or two)
  5. Add salt pepper to taste
  6. Pull halved eggs from fridge,  refill the yolk mixture into the yolk hole. Sprinkle with paprika and chill before serving.
