Honey-Lime Chicken Soba Noodle Salad
BellaFina™ peppers may be used to create a wide variety of recipes, from appetizers to main dishes. BellaFina peppers are often used in salads, vegetables trays with or without dip, cooked in stews and sauces and stuffed with meat, cheese and grains.
Grown on the vine in the field, BellaFina peppers are a great source of vitamins and nutrients. They are low calorie, fat free, sodium free and high in Vitamin C.

Ingredients
2 bunches soba noodles (180g/6.4 oz)
2 cups honey-lime chicken
7-8 Bellafina peppers, cut into fine strips
1 cup purple cabbage, shredded
1 zucchini, shredded
Toasted sesame seeds to garnish
Sesame Vinaigrette:
2 tablespoons olive oil
2 tablespoons white wine vinegar
1 teaspoon sesame oil
3 teaspoons honey
½ teaspoon Dijon
Instructions
Bring a large pot of water to boil, and cook soba noodles for 5-8 minutes, until tender, but not mushy. Drain and rinse under cold water. Set aside.
Combine chicken, Bellafina peppers, cabbage and zucchini in a large bowl.
Shake together vinaigrette ingredients and toss veggies with half of the dressing. Toss the soba noodles with remaining vinaigrette.
Serve soba noodles topped with veggies and sprinkle with sesame seeds.
