Honey Jalapeno Chicken Tenders
Jalapeños are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapeños have a balanced combination of flavor and heat. The demand for these have caused breeders to develop a broad range of varieties.
Serves 6.
Ingredients
¼ cup honey
3 tablespoons soy sauce
2 tablespoons extra-virgin olive oil
3 garlic cloves, minced
4 jalapeño peppers, (seeds removed and finely chopped)*
1 tablespoon finely grated lemon zest
Juice of 1/2 a lemon (keep other half for dipping sauce)
2 teaspoons kosher salt
¾ teaspoon black pepper
3 pounds chicken tenders
Instructions
Preheat the grill and oil the grill rack.
In a small mixing bowl, whisk together the honey, soy sauce, oil, garlic, jalapeños, lemon zest, salt, and pepper. Add the marinade and chicken to a large ziploc bag. Coat chicken with the marinade and refrigerate for at least 20 minutes.
Remove from the marinade. Grill the chicken until well browned and cooked through, 4 to 6 minutes. Serve the chicken with the cilantro yogurt sauce.
Notes
*If you want more heat, do not remove all of the seeds. The more seeds, the spicier the chicken will be.
