Honey Chipotle Cranberry Sauce Turkey Burgers

Morita chiles are red, fully mature Chipotles. This gives them a unique, medium – hot smokey flavor which is popular in many Southwestern dishes. These can be added to sauces (including Mole) to add smokey flavor and maintain the red color of the sauces. These peppers are about 2-4 inches in length, 1 inch in width, and have a deep brick reddish brown color. The word Chipotle translated to smoked chile. Consider the Chipotle a 6.5 on a scale of 1-10 (10 being the hottest). Scoville heat units 7,000-25,000.

Suggested Use:
Use Morita in enchilada sauces, chili, stews, barbecue ribs, and corn bread. Their smoky quality combines well with poultry, meats and fall squash.

Serves: 4

Ingredients:

For the cranberry sauce:
1 12 oz bag of fresh or frozen cranberries
¾ cup brown sugar
⅔ cup water
2 tablespoons orange juice
3 tablespoons honey
1 tablespoon chopped chipotles, rehydrated in hot water, then drained
½ teaspoon cumin
½ teaspoon salt
1 cup fresh spinach
8 slices onion
4 slices Monterey Jack cheese
4 Kaiser rolls
2 tablespoon mayo
1 clove garlic, minced.
4 frozen turkey burgers

Instructions

In a small saucepan, combine cranberries, sugar, water, orange juice, honey and chipotle pepper. Cook mixture over medium heat. Allow cranberries to come to a boil. Cranberries will begin to pop; stir in cumin and salt. Reduce heat and let mixture cook down and thicken, about 8-10 minutes. Remove from heat and let cool.
Meanwhile, cook burgers according to package directions. Top burgers with cheese and cook an additional minute or until cheese has melted. Remove.
Combine mayo and garlic in a small bowl. Place a teaspoon of mayo on each half of each bun. Top bottom buns with burgers, onions and spinach. Place a generous amount of cranberry sauce on each burger. Serve. (You will have lots of leftover cranberry sauce.)
