Herbed Ricotta Stuffed Mini Peppers
BellaFina™ peppers may be used to create a wide variety of recipes, from appetizers to main dishes. BellaFina™ peppers are often used in salads, vegetables trays with or without dip, cooked in stews and sauces and stuffed with meat, cheese and grains.
Ingredients:
2 cups ricotta cheese
3 T minced scallions, white and green parts (2 scallions)
1 T each minced fresh oregano, basil, flatleaf parsley, sorrel, arugula
Sea salt and freshly ground black pepper
Mini peppers, cored, seeded, cut in half
Instructions:
Combine ricotta and herbs. Season to taste with salt and pepper, set aside.
Fill each pepper with about 3 tablespoons of herb ricotta mixture. Portions will vary pending size of peppers.
