Hearty Meat Sauce
This Caribbean pepper is famous for being the hottest chile pepper in the world. They come in a variety of shapes and colors(yellow, orange,green, red,chocolate). Not only are they extremely hot, but they also have a unique,distinctively fruity flavor.
It is the key ingredient in the popular Jamaican Jerk sauce. The habanero is also widely used in many different types of hot sauces. The popularity of this chile pepper continues to grow and is becoming easier to find on the grocery shelf.
Ingredients:
1 lb lean ground beef
1 lb ground turkey
2 Tbsp olive oil, divided
2 cups celery, chopped
2 cups onions, chopped
6 oz mushrooms
3 minced garlic cloves
2 carrots, chopped
2 red bell peppers, chopped
2 scotch bonnet (habanero) peppers, chopped
1 Tbsp fresh thyme
1 Tbsp fresh rosemary
1 Tbsp oregano
2 Tbsp fresh basil
1 Tbsp ground pepper, divided
1 tsp kosher salt, divided
1 Tbsp celery seed
2 bay leaves
2 (29 oz) cans tomato paste
2 (6 oz) cans tomato paste
2 (28 oz) cans diced tomatoes
Instructions:
In a large hot sauce pan, add 1 Tbsp of olive oil, and brown ground beef and turkey, season lightly with salt and pepper.
Put aside once browned, strain out any fat.
Add 1 Tbsp of olice oil to large hot sauce pan. Add onion, celery, carrot, garlic, mushrooms, red peppers,and habanero peppers. Stir and saute for 2-3 minutes, until onions and celery begin to brown.
Add thyme, rosemary, oregano, celery seed, salt, and pepper. Mix well to incorporate all herbs and spices.
Add browned meat, stirring well. Add the tomato, sauce, diced tomatoes, and paste. Stir to mix completely. Add basil and bay leaves.
Bring sauce to a boil on medium-high heat. Reduce to a simmer for 1-2 hours.
Serves 18-20.
