Hare Tamatar Ki Sabzi
These are very hot little firecrackers from the orient. They can be used to add spice to almost any oriental dish. They dry very easily and can be stored and used this way for a long time.
Serves: 4
INGREDIENTS
Vegetable oil – 2 tbsp
Hing – ¼ tsp
Cumin seeds – 1 tsp
Fenugreek seeds – ¼ tsp
Ginger – 1 tsp ( Finely chopped )
Garlic – 1 tsp ( Finely chopped )
Green chile – 1 tsp ( Chopped )
Raw tomato – 2 cups ( Chopped )
Coriander powder – 2 tsp
Turmeric powder – 1 tsp
Red chili powder – 1 tsp
Salt to taste
Jaggery – 2 tbsp ( Grated )
Fresh coriander – 2 tbsp ( Chopped )
INSTRUCTIONS
Heat oil in a pan.
Once the oil is hot, add hing, cumin seeds and fenugreek seeds and let them crackle for a few seconds.
Add ginger, garlic and green chilli and fry them for a minute.
Add tomato, coriander powder, turmeric powder, red chilli powder and salt.
Cover and cook until tomatoes are mushy.
Add jaggery and coriander and mix well.
Serve hot with Dal Rice or Phulke.
