Habanero Jerk Hot Sauce

This Caribbean pepper is famous for being the hottest chile pepper in the world. They come in a variety of shapes and colors(yellow, orange,green, red,chocolate). Not only are they extremely hot, but they also have a unique,distinctively fruity flavor.

It is the key ingredient in the popular Jamaican Jerk sauce. The habanero is also widely used in many different types of hot sauces. The popularity of this chile pepper continues to grow and is becoming easier to find on the grocery shelf.

Ingredients:

10 habaneros, stemmed and seeded
1 medium white onion, chopped
6 cloves garlic
1 cup mango puree
1/4 cup lime juice
1 Tbsp. grated ginger
4 Tbsp. jerk seasoning
4 Tbsp. rice wine vinegar
4 Tbsp. sugar
2 tsp. salt
1/2 cup water, or as needed

Instructions:
1. Place all the ingredients, except the vinegar and sugar, in a food processor and blend to fine texture. Place in a saucepan over high heat and bring to boil. Reduce the heat to low and cook 20 minutes, then let it cool for 20 min.

2. Place in a blender and puree to a smooth consistency. Add water while it is blending until it has a nice bottled sauce consistency.

3. Pour into a saucepan over medium heat and cook for 10 minutes. Stir in the vinegar.

4. With a baster, place medium hot (temperature) sauce into boiling hot 5 oz. bottles and cap while hot. If kept in a cool place and refrigerated after opening, it will have good shelf life.
