Habanero Caribbean Hot Sauce
This Caribbean pepper is famous for being the hottest chile pepper in the world. They come in a variety of shapes and colors(yellow, orange,green, red,chocolate). Not only are they extremely hot, but they also have a unique,distinctively fruity flavor.
It is the key ingredient in the popular Jamaican Jerk sauce. The habanero is also widely used in many different types of hot sauces. The popularity of this chile pepper continues to grow and is becoming easier to find on the grocery shelf.
Ingredients:
1 large onion, coarsely chopped
4 large garlic cloves, sliced
5-6 golden habaneros, halved and seeded
5-6 orange-red habaneros, halved and seeded
2 yellow bell pappers, seeded and coarsely chopped
1 Tbsp. vegetable oil
1/2 cup vinegar
1/2 cup beer
1/2 tsp. turmeric
1 tsp. dry mustard
Instructions:
In a heavy saucepan, saute the onion, garlic, and peppers in the oil over medium heat until the onion is softened and translucent, about 8 to 10 minutes. Add the remaining ingredients and simmer for 5 minutes. Cool to room temperature and puree in a blender or food processor. Serve in a cruet or decorative bottle with a small spout. This sauce is hot!
Yields approximately 2 cups.
