Green Chile Tartar Sauce

This chile pepper gets its name from its origin. In Spanish, serrano is an adjective meaning “from the mountains” which is where it originated-in the mountains of Hildalgo, Mexico. The serrano is normally about twice as hot as Jalapeno (about 10,000 to 15,000 Scoville units). It is the second most popular chile pepper in Mexico. This chile is used mostly for salsas but can also be used in soups, sauces, chili or stews. Try these as a hotter substitute for Jalapeno.

INGREDIENTS

 2 roasted green chiles

 1 C mayonnaise

 juice of 1/2 lemon

 1/4 C capers

 1 tsp Kosher salt

METHOD

1  Wearing gloves, scrape the blacked skins from the chiles. Cut off the stem end and halve the chile lengthwise. Scrape out the seeds. Discard the skins and seeds, then mince.

2  Combine the green chiles and all remaining ingredients in a small bowl.

3  Cover and refrigerate for at least 1 hour before using. Serve with this fried catfish.
