Green Chicken Chili
The tomatillo is a plant of the nightshade family, related to the cape gooseberry, bearing small, spherical and green or green-purple fruit of the same name. Tomatillos originated in Mexico, and are a staple of that country’s cuisine.

Ingredients
2 pounds boneless chicken breasts, diced
2 pounds tomatillos, rinsed and husked
4 to 6 Anaheim chili peppers, seeded and diced
1 jalapeño, seeded and minced
1 large yellow onion, diced
3 garlic cloves
3 cups chicken stock
2 teaspoons salt
2 teaspoons black pepper
1 teaspoon cumin
1 teaspoon dried oregano
1 lime, juiced
toppings
sour cream
cheese
cilantro
tortillas (for serving)
Instructions
Combine all of the ingredients in the bowl of a slow cooker (except the toppings, of course). And cook on low for 6 to 8 hours or on high for 2 to 4 hours. Right before serving, take the back of a spoon or a potato masher and break down the chicken into smaller pieces. Garnish with desired toppings and enjoy.
