Green Beans Pacha Di

Finger Hot is the commercial name for this asian-type pepper that is actually very similar to fresh cayenne and can be used in any recipe to add heat without changing the flavor. It is a good chile to chop and use in stir fry.

They are thin-walled and measure about 1/2″ wide and 5″ to 8″ long. These chiles also dry very nicely.

Ingredients:

15 long green beans
1 small onion, diced fine
1/2 cup grated coconut
2 finger hot chiles, stemmed, seeded and chopped fine
salt to taste
oil for frying

Instructions:

Chop the green beans into 1/2″ pieces and fry with a little oil and salt until the beans are cooked. Add the finely chopped onions, chiles and the grated coconut.

Serve as a side-dish with rice and any curry dish.
