Greek Stuffed Roasted Sweet Peppers

Yield: SERVES 12
Ingredients:
12 sweet mini-peppers, halved and seeded
1 cup Sabra Olive Tapenade hummus
1/4 cup feta crumbles
1/4 cup red onion, chopped
2 Tbsp green onion
1 Tbsp parsley, chopped
Directions:
Preheat oven to 425 degrees. Grease a rimmed baking sheet.
Place sweet mini-peppers on the baking sheet in an even layer. Bake for 5 to 7 minutes.
Remove from oven and fill with 1 to 2 Tbsp of Sabra Olive Tapenade hummus.
Top with feta, red onion, green onion, and parsley. Serve immediately.
