Grain Free Burrito Bowl

Morita chiles are red, fully mature Chipotles. This gives them a unique, medium – hot smokey flavor which is popular in many Southwestern dishes. These can be added to sauces (including Mole) to add smokey flavor and maintain the red color of the sauces. These peppers are about 2-4 inches in length, 1 inch in width, and have a deep brick reddish brown color. The word Chipotle translated to smoked chile. Consider the Chipotle a 6.5 on a scale of 1-10 (10 being the hottest). Scoville heat units 7,000-25,000.

Ingredients:

Rice:
1 head Cauliflower chopped
2 tablespoons Cilantro chopped
Zest of 1 Lime

Beans:
2 cans Pinto Beans
¼ teaspoon Garlic Powder
¼ teaspoon Chipotle Chili Powder (grind dried chile in coffee or spice grinder)
¼ teaspoon Cumin
Fixings:
Guacamole
Salsa
Sour cream (obviously skip if you are vegan)
Cheese (skip if you are vegan)
Nutritional yeast (an awesome vegan cheese substitute)
Hot Sauce

Instructions:

Serves: 2-4

Rice:
In a food processor fitted with the blade, add the cauliflower. Pulse until it is the texture of rice. In a microwave safe bowl add the cauliflower. Microwave for 5 minutes. Add the cilantro and lime and stir well. Season with salt and pepper.

Beans:
In a medium pan add the beans and spices. Season with salt and pepper. Heat through. Assemble. Layer the cauliflower rice, beans, and fixings. Dive in, face first!!
