Fresh Amish Heirloom Tomato Salsa

This Caribbean pepper is famous for being the hottest chile pepper in the world. They come in a variety of shapes and colors(yellow, orange,green, red,chocolate). Not only are they extremely hot, but they also have a unique,distinctively fruity flavor.

It is the key ingredient in the popular Jamaican Jerk sauce. The habanero is also widely used in many different types of hot sauces. The popularity of this chile pepper continues to grow and is becoming easier to find on the grocery shelf.

Ingredients:

4 large Amish paste tomatoes
1/4 cup onion, chopped
1/4 cup fresh cilantro, chopped
1 Tbsp. fresh oregano, chopped
2 cloves garlic, minced
4 tsp. habanero minced
1 Tbsp. olive oil
2 tsp. lime juice
salt to taste

Instructions:
Cut the tomatoes in half lengthwise and remove the seeds. Cut the halves into 1/4″ pieces and place in a mixing bowl. Stir in the remaining ingredients and cover loosely. Let stand at room temperature for 4 hrs. before serving.

Makes about 5 cups.
