Finger Hot Salsa
Finger Hot is the commercial name for this asian-type pepper that is actually very similar to fresh cayenne and can be used in any recipe to add heat without changing the flavor. It is a good chile to chop and use in stir fry.
They are thin-walled and measure about 1/2″ wide and 5″ to 8″ long. These chiles also dry very nicely.
1 large onion, chopped into small pieces
1 large green pepper, chopped into small pieces
1 entire bulb of garlic, minced
1 Tbsp. fresh cilantro, minced
1 Tbsp. ground black pepper
1 large can crushed tomatoes
2 cans diced tomatoes (add juice and all)
salt to taste
1/4 pound fresh finger hot chiles, minced
2 Tbsp. fresh lime juice
1 large habanero pepper, minced
Add all of the ingredients together into a pot. Simmer gently, just long enough to combine the flavors of everything, then refrigerate for a while.
