Fava Bean Avocado Guacamole

Jalapeños are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapeños have a balanced combination of flavor and heat. The demand for these have caused breeders to develop a broad range of varieties.

Ingredients

1 cup frozen, cooked and cooled fava beans (microwave 2-3 minutes or steam 5-6 on stove)
2 avocados
2 cloves garlic, minced
2 tbs. red onion, rough chopped
½ jalapeno, chopped
juice 2 limes
2 tbs. chopped cilantro
½ tsp. seasoned salt
pinch red pepper
10 grape tomatoes, chopped
1 tbs. finely minced red onion

Instructions

In a food processor, add fava beans, 1½ of the avocado meat, garlic, red onion, jalapeno, lime juice and season salt. Puree until smooth, making sure to scrape the bowl a few times.
Add cilantro, and pulse a few times until combined.
Place mixture into a bowl.
Add tomato, minced red onion and the remaining avocado, cubed.
Stir until combined. Taste for seasoning. Add pinch of red pepper to taste.
