Ingredients:
poblano
1 pound beef or chicken strips
1/4 cup onion, sliced
1 tsp. cumin
2 Tbsp. fresh lime juice
1 tsp. chili powder
1/8 tsp. sugar
1 tsp. salt
1 Tbsp. chopped cilantro
1/4 tsp. garlic powder
3 cups chopped romaine lettuce
1/8 tsp. cinnamon
8 flour tortillas
1/8 tsp. ground cloves
salsa for garnish
2 tsp. olive oil
2 medium poblano peppers
2 medium red bell peppers

Instructions:

Rub:

Combine the cumin, chili powder, 1/2 tsp. salt, garlic powder, cinnamon, and cloves in a medium bowl. Toss in the meat strips and coat with the rub.

Heat 1 tsp. of oil over high heat and add the poblano and red bell peppers to the skillet. Cook for 8 minutes or until the peppers are tender and browned on the edges. Transfer them to a bowl.

Heat the remaining 1 tsp. of oil in a skillet over high heat. Add the meat strips and cook, stirring occasionally until done. Transfer the strips to a medium bowl. Combine the onion, lime juice, salt, sugar, and cilantro. Add the chopped romaine and toss well. Warm the tortillas and divide the meat, peppers, and lettuce into the centers of each tortilla. Roll them up and serve with salsa fresca.
