DIY Loaded Potato Skins Bar
Jalapeños are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapeños have a balanced combination of flavor and heat. The demand for these have caused breeders to develop a broad range of varieties.
Serves: 8 SKINS
Ingredients
4 large russet potatoes
2 tbsp olive oil
½ cup grated mozzarella cheese
½ cup grated cheddar cheese
Topping ideas
Tomatoes
Jalapeños
Corn
Bacon
Sour cream
Guacamole
Salsa
Green onions
Roasted peppers
Instructions
Preheat oven to 450 F. Wash potatoes and poke each all over with a fork. Wrap in tin foil and place in oven to cook for about 45 minutes once oven has been preheated.
Remove potatoes from oven, and let cool for 15-20 minutes. Slice each in half with a large knife, then scoop out most of the flesh inside each potato. You can set aside to use later for mashed potatoes or to create twice baked potatoes.
Cover potatoes in ½ tbsp of olive oil each, then put back in the oven for 5 minutes. Cover each with cheese and cook for another 5 minutes until cheese i melted.
Lay toppings out family style and top potato skins with toppings of your choice!
