Curried Chicken with Mango

Ingredients:

2 whole skinless, boneless chicken breasts, split
8 oz. nonfat plain yogurt
1 tsp. New Mexican chile powder
1 tsp. mild or hot curry powder
3/4 tsp. fresh lime juice
1/8 tsp. fresh minced garlic
1 large ripe mango, peeled, diced finely

Instructions:

Combine equal parts (1/4 cups) of yogurt, curry powder and chile powder, 1/4 tsp. of lime juice, and garlic. Coat the chicken breasts with this mixture and let them marinate at least 1 hour.

While the chicken marinates, puree the remaining yogurt, 2/3 of the diced mango, and 1/2 tsp. of lime juice in a blender.

Preheat oven to 375F.

Bake the chicken in a glass baking dish for about 25 minutes. Put the chicken on serving plates and pour on the sauce and sprinkle with mango. Serve extra sauce on the side.
