Cranberry-Jalapeno Relish

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat.

The demand for these have caused breeders to develop a broad range of varieties. You can now get jalapenos with various heat level and sizes. These can be used in salsas, stuffed, or eaten straight with cheeseburgers (my personal favorite).

Ingredients:

1 large orange, unpeeled and cut into 8 sections
2 cups whole cranberries, washed
2 tsp. fresh ginger, peeled and grated
2 tsp. fresh cilantro leaves, chopped
2 tsp. fresh jalapeno chile, chopped
maple syrup, to taste

Instructions:

Coarsely chop orange zest and pulp, cranberries, ginger, cilantro and jalapeno in a food processor or blender, using the pulse setting. Do not puree. Transfer the mixture into a mixing bowl and add some maple syrup, then mix together well.

Cover the relish and refrigerate it for at least 30 minutes before serving.
