Corn Salsa
Jalapeños are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapeños have a balanced combination of flavor and heat.
Ingredients:
1 (15-1/4 oz.) can whole kernel corn, rinsed and drained
half a (4-1/2 oz.) can chopped green chiles, drained
half a (2-1/4 oz.) can sliced ripe olives, drained
1 small tomato, chopped
2 jalapeño peppers, seeded and diced
1-1/2 Tbsp. white vinegar
2-1/2 Tbsp. olive or vegetable oil
1/4 tsp. salt
Instructions:
Stir together all of the ingredients in a large bowl. Cover and chill, stirring often, for at least 2 hours.
Yields 3 cups.
