Cilantro-Mint Chutney

Finger Hot is the commercial name for this asian-type pepper that is actually very similar to fresh cayenne and can be used in any recipe to add heat without changing the flavor. It is a good chile to chop and use in stir fry.

They are thin-walled and measure about 1/2″ wide and 5″ to 8″ long. These chiles also dry very nicely.

Ingredients:

3/4 cup chopped cilantro, firmly packed
1/2 cup chopped fresh mint, firmly packed
3 or 4 fresh finger hot green chiles
1 Tbsp. lemon juice
3/4 cup plain yogurt
1/4 to 1/2 tsp. salt

Instructions:

Put the first 4 ingredients in a blender or food processor along with 3 Tbsp. of water and process until smooth.

Beat the yogurt in a bowl until it is creamy, then add the cilantro mixture and fold it in with the yogurt. Add salt to taste.
