Chipotle Tomatillo Salsa

Ingredients:

1 pound tomatillos (about 15), blackened and roughly chopped
1 large clove roasted garlic
1/2 tsp. sugar
1/2 tsp. salt
4 chipotles en adobo (to use dried chiles, rehydrate in hot water first)
2 Tbsp. adobo sauce
1/3 cup chopped fresh cilantro

Instructions:
Place the tomatillos, garlic, sugar and salt in a food processor. Blend until mostly pureed. Add the chipotles, adobo sauce and cilantro leaves and pulse briefly, leaving the salsa just a little textured.

Great with red meat or pork dishes.
