Ingredients:

2 garlic cloves
1-2 canned chipotle peppers (to use dried chiles, rehydrate in hot water first)
1/2 tsp. salt
1/3 cup fresh lemon juice
1/3 cup egg substitute
1/4 cup shredded parmesan cheese
1/2 cup olive oil

Instructions:

Pulse the first 3 ingredients in a food processor 3-4 times or until the garlic is minced. Add the lemon juice, egg substitute and parmesan cheese. With the food processor running, pour the oil through the food chute in a slow, steady stream and process the ingredients until smooth. Cover and chill until ready to serve.

Yields 1-1/4 cups.
