Chile-Lime Sauce (Chile-Limon)

JalapeƱos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. JalapeƱos have a balanced combination of flavor and heat.

Ingredients:
1/2 pound tomatillos, husks removed
salt
1/2 cup fresh lime juice
1/2 small onion, coarsely chopped
1/4 cup water
4 jalapenos, seeded and coarsely chopped
4 cilantro sprigs
3 garlic cloves

Instructions:
In a small saucepan, sprinkle the tomatillos with a pinch of salt. Cover with water and bring to a boil. Cook just until the tomatillos change color, about 5 minutes. Drain them and allow to cool. Transfer the tomatillos to a blender, add the remaining ingredients and puree.

The sauce can be made ahead of time and refrigerated overnight.
