Chile Ale Bacon-Wrapped Brautwurst Bites

Jalapeños are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapeños have a balanced combination of flavor and heat. The demand for these have caused breeders to develop a broad range of varieties.

For Bratwurst Bites:

10 bratwurst links
36 oz. Fire Season Chili Ale
1 cup brown sugar
1 TBSP cayenne pepper
1 TBSP chili powder
12 slices bacon, cut in half

For Chili-Cheese Dip:
4 oz. Fire Season Chili Ale
8 oz. cream cheese
8 oz. Italian Cheese Blend, shredded
6 sun-dried tomatoes
2 roasted jalapeños
2 dashes of Worcestershire Sauce
Hot Sauce, to taste


For Bratwurst Bites:
Place bratwursts into a saucepan with the chili ale.
Bring to a boil over high heat, then reduce heat to low, and simmer for 25 minutes.
Remove the bratwurst from the beer, and allow to cool to room temperature
Preheat Big Green Egg (or other grill) to 425° F.
Toss the brown sugar, cayenne, and chili powder together in a large bowl.
Cut each bratwurst into three pieces, wrap each piece with half strip of bacon, and secure with a toothpick.
Toss the bratwurst with the sugar/spice mixture to coat.
Place bratwurst bites on top rack with foil shield below.
Grill until until the bacon is brown and crisp, 25 to 35 minutes.

For Chili-Cheese Dip:
Combine everything and blend until smooth.
Heat before serving.
