Chicken Wings with Chiles and Lime

Jalapenos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapenos have a balanced combination of flavor and heat. The demand for these have caused breeders to develop a broad range of varieties.

Ingredients:
1/2 cup fresh lime juice
4 cloves garlic, crushed
4 tsp. grated fresh ginger
3 jalapeno chiles, seeded and finely chopped
2 pounds chicken wings and drumettes

Instructions:
Combine the lime juice, garlic, ginger and jalapeno chiles in a glass or nonreactive metal bowl. Add the chicken pieces and turn to coat evenly. Cover and refrigerate the chicken for at least 1 hour and up to 4 hours, turning occasionally. Remove from the refrigerator and let stand at room temperature for 20 minutes prior to grilling.

Preheat a grill pan over medium heat until very hot. Add the chicken wing sections and drumettes and grill for about 20 minutes, turning occasionally, until cooked through and firm. Serve immediately.
