Cherry Salsa
JalapeƱos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. JalapeƱos have a balanced combination of flavor and heat.
Ingredients:
1/2 cup dried tart cherries
1/2 cup cherry preserves
2 Tbsp. red wine vinegar
1/2 cup chopped red onion
1/2 cup chopped yellow bell pepper
1/2 cup chopped jalapeno chiles (approximately 2 medium chiles)
1-2 Tbsp. chopped fresh cilantro
1 tsp. lime or lemon juice
Instructions:
Combine the dried cherries, preserves and vinegar in a small microwave-safe bowl and mix well. Microwave on high (100% power) for 1 to 1-1/2 minutes or until hot. Let the mixture stand for 5 minutes. Stir in the red onion, yellow bell pepper, jalapeno peppers, cilantro and lime juice. Refrigerate, covered for 3-4 hours or overnight.
This makes an excellent topping for hamburgers.
