Carrot Ginger Soup with Honey Caramelized Apples

JalapeƱos are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. JalapeƱos have a balanced combination of flavor and heat. The demand for these have caused breeders to develop a broad range of varieties.

Ingredients:
2 Carrots
1 small Chile
1 Tsp Ginger
1 Onion
1 Apple
1/2 Clove of Garlic
1 Tbsp Butter
50ml/4 tsp Whitewine
500ml/2 cups Stock
150ml/ 2/3 cups Cream
2 Tbsp Honey
Salt
Pepper

For the Soup:
Peel and chop the carrots and onion.
Braise the onion in some butter and add in the carrots.
Deglaze it with some white wine; let it reduce and fill it with stock.
Add in the chile and let it simmer for 20 minutes. Take half of an apple and chop it.
Add it into the soup, squeeze some garlic in and let it simmer for 10 minutes.
Season with salt and pepper.
Take out the chile and add in the cream and cold butter; blend it till its a nice creamy soup.

For the Apple:
Cut the second half of an apple into 4 slices.
Let the honey melt in a pan.
Add in the apple slices and caramelize it in the pan on a middle heat.
Add the soup into small bowls and put a slice of apple on top of each.
