Cajun Catfish with Spicy Strawberry Sauce
Bailey Farms hot sauces are all natural and of the highest quality. Unlike other sauces that are mostly pepper-vinegar, they are a blend of chiles and fresh vegetables that are cooked down to perfection and deliver the perfect balance of heat and flavor.
Ingredients:
2 lb catfish fillets
salt and pepper to taste
2 oz Bailey Farms Hot Sauce
1 1/2 cups strawberry preserves
1/2 cup balsamic vinegar
1 Tbsp soy sauce
1/4 cup seafood cocktail sauce
1 clove garlic, minced
2 tsp prepared horseradish
3/4 cup cornmeal
3/4 cup flour
1/2 cup canola oil
fresh strawberries
Instructions:
Place catfish in a shallow container and season with salt, pepper and hot sauce. Cover and refrigerate 1 hour.
In a small saucepan, combine preserves, vinegar, soy sauce, cocktail sauce, garlic and horseradish. Simmer over low heat, stirring occasionally.
Blend cornmeal and flour in a shallow bowl. Drain catfish and dredge in cornmeal mixture, coating on all sides. Heat oil in heavy skillet over medium-high heat. When hot, add catfish and saute until browned on all sides. Drain well on paper towels and keep warm. Spoon 1/4 cup sauce on each plate and top with catfish fillets. Garnish with sliced strawberries.
