Bombay Masala Toast

These are very hot little firecrackers from the orient. They can be used to add spice to almost any oriental dish. They dry very easily and can be stored and used this way for a long time.

Ingredients

For The Sandwich Masala: (Makes 10-12 Tbsp)
Cumin Seeds/Jeera – 2 Tbsp
Fennel Seeds/Saunf – 1
Cloves/Laung- 4-5
Cinnamon Stick/ Dalchini – 1-2
Black Peppercorns/Kali Mirch- 6-7
Star Anise – 1
Black Salt/Kala Namak – 2 Tsp
Salt As Per Taste
Dried Mango Powder/Amchoor – 1 Tbsp

For The Spicy Potato Stuffing:
Oil – 1 Tbsp
Mustard Seeds /Rai – 1 Tsp
Finely Chopped Green Chili – 3-4
Potatoes, Boiled, Peeled And Mashed – 1½ Cup Or 4 Medium (You Can Also Use Mashed Potatoes)
Turmeric Powder/Haldi – ½ Tsp
Coriander Powder/Dhaniya – 1 Tbsp
Salt To Taste
Chopped Coriander Leaves

For Sandwiches:
White Bread Slices – 8-10 (You Can Use Any Other Bread You Like)
Green Chutney As Required
Red Onion Thinly Sliced
Tomato, Thinly Sliced
Cucumber, Thinly Sliced
Butter Or Margarine About – 4 Tbsp
Sandwich Masala As Required
Sev For Garnishing
Tomato Ketchup Or Green Chutney For Serving

Instructions

For The Sandwich Masala:
Heat a pan, and add the cumin seeds, cloves, fennel seeds, star anise, cinnamon, black peppercorns, and dry roast on a low heat for 3-4 minutes. Let it cool.

Grind it well to make a fine powder.

Add black salt, dried mango powder, and salt to it. Mix well.
Sandwich masala is ready. You can store it in an air-tight container.

For Potato Stuffing:

Heat 2 tbsp oil in a pan.
Add mustard seeds. When start to crackle add green chilled and sauté for 2 minutes.

Add coriander powder, turmeric powder and sauté low heat for about a minute.

Add mashed potatoes, salt, chopped coriander leaves and mix well.
Let it saute on a low heat for about 3-4 minutes.

Turn off the heat and keep this stuffing aside for about 7-8 mins.

For Sandwiches:
Spread butter evenly on 4 bread slices.

Spread some green chutney on 2 bread slices.(You can also spread chutney on all slices.)

spread the potato stuffing on 2 bread slices.

Top with onion slices, tomato slice, and cucumber slices.
Sprinkle with some sandwich masala powder.

Cover with the 2 bread slices and press them lightly. (You can also apply some butter on both sides of the sandwiches.)

Toast the sandwiches in a sandwich maker as per the manufacturer’s instructions or grill them till they are nice, crisp and golden.

Repeat the same with remain bread slices.

For Serving:
Spread some butter on top of the hot sandwiches.

Sprinkle with some sev and serve hot with tomato ketchup or green chutney.
