Bolivian Hot Pickled Chicken (Escabeche de Pollo)

This Caribbean pepper is famous for being the hottest chile pepper in the world. They come in a variety of shapes and colors(yellow, orange,green, red,chocolate). Not only are they extremely hot, but they also have a unique,distinctively fruity flavor.

It is the key ingredient in the popular Jamaican Jerk sauce. The habanero is also widely used in many different types of hot sauces. The popularity of this chile pepper continues to grow and is becoming easier to find on the grocery shelf.

Ingredients:

1 large chicken, cut into pieces
2 large onions, thinly sliced
2 fresh habaneros, seeds and stems removed, minced, or substitute 6 jalapenos
3 carrots, peeled and cut into quarters
1 red bell pepper, seeded and sliced
1/2 cup olive oil
1 cup red wine vinegar
salt and freshly ground black pepper to taste
1 large bay leaf, crumbled
1/4 tsp. ground nutmeg
salt and pepper to taste

Instructions:

Combine all the ingredients in a pot and cook, covered, over low heat for about 40 minutes. Correct the seasoning and let it cool before serving.

Serve this in large individual soup bowls accompanied with warm corn tortillas.

Yields 4 servings.
