Black Bean and Corn Salsa

Jalapeños are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapeños have a balanced combination of flavor and heat. The demand for these have caused breeders to develop a broad range of varieties.

Ingredients
1 15 ounce can black beans, rinsed and drained
1/2 cup corn, rinsed and drained
1 jalapeno, seeded and chopped more, to taste
2 roma tomatoes, chopped
1/3 cup cilantro, chopped
1 Tbsp red onion, chopped
1 lime, juiced
1/8 tsp salt
dash pepper

Instructions
Combine all ingredients in a bowl and mix gently. Serve!
