Avocado Salsa Verde
The tomatillo is a plant of the nightshade family, related to the cape gooseberry, bearing small, spherical and green or green-purple fruit of the same name. Tomatillos originated in Mexico, and are a staple of that country’s cuisine.
Serves: 5 cups
Ingredients:
6 tomatillos, husked removed
¼ cup chopped sweet onion
¾ cup fresh cilantro
1 garlic clove
2 tablespoons lime juice
1 jalapeno
½ teaspoon ground cumin
½ teaspoon salt
1 large avocado
Instructions:
To a food processor, add tomatillos, sweet onion, fresh cilantro, garlic clove, lime juice, jalapeno. ground cumin, and salt. Blend until smooth and starts to look like salsa.
Next add in one avocado. Pulse the blender 5-6 times to blend all the ingredients together and avocado is slightly chunky.
Serve!
