Aunt Lindy’s Habsolutely Mango

This Caribbean pepper is famous for being the hottest chile pepper in the world. They come in a variety of shapes and colors(yellow, orange,green, red,chocolate). Not only are they extremely hot, but they also have a unique,distinctively fruity flavor.

It is the key ingredient in the popular Jamaican Jerk sauce. The habanero is also widely used in many different types of hot sauces. The popularity of this chile pepper continues to grow and is becoming easier to find on the grocery shelf.

Ingredients:

6 whole mangos, peeled and seeded
7 whole kiwi fruit, peeled
7 whole habanero chile peppers (fresh), stemmed and seeded
juice of 4 limes
juice of 3 lemons
4 Tbsp orange juice frozen concentrate
1/3 cup white vinegar
1 tsp salt
2 cups water

Instructions:

In a stock pot, add habaneros, water, and salt. Slow boil for 15 minutes, then drain, saving 3/4 cup of water.

In a blender, puree the saved water and all the ingredients except the vinegar. Return to stock pot and simmer on medium low heat for 10 minutes, stirring constantly. Remove from heat and stir in vinegar until slightly cooled.

Keeps in the refrigerator for 4 months or may be canned and processed. Refrigerate after opening.
