Asian Roasted Jalapenos

Jalapeños are the most popular chile peppers in the US. This is probably due to the availability and versatility of the chile. Jalapeños have a balanced combination of flavor and heat. The demand for these have caused breeders to develop a broad range of varieties.

Serves: 24 slices

INGREDIENTS
12 jalapenos, halved with seeds removed
8 oz. cream cheese, softened
½ cup peanut butter
½ teaspoon ginger, minced
2 cloves garlic, minced
Salt, to taste (approx. ⅛ to ¼ teaspoon)
Green onions, sliced, for garnish

INSTRUCTIONS
Pre-heat oven to 350°F. Cut jalapenos in half. Using a spoon, scoop out the “insides” – seeds and all. Lay out on a large baking sheet.
Using a hand mixer, beat together the cream cheese, peanut butter, ginger, garlic, and salt.

Fill jalapeno halves with cream cheese mixture; I use a piping bag for ease, but you could easily just scoop it in with a spoon.
Bake in the oven for 8-10 minutes.

Top with green onions slices and serve.

NOTES
If you don’t have a piping bag, use a ziplock with a corner snipped off. As mentioned in the recipe, you can also just scoop the filling in without any kind of bag!
