Apple Pepper Jelly
This Caribbean pepper is famous for being the hottest chile pepper in the world. They come in a variety of shapes and colors (yellow, orange, green, red, chocolate). Not only are they extremely hot, but they also have a unique, distinctively fruity flavor. It is the key ingredient in the popular Jamaican Jerk sauce. The habanero is also widely used in many different types of hot sauces. The popularity of this chile pepper continues to grow and is becoming easier to find on the grocery shelf.
INGREDIENTS
⅔ Cups Hot Peppers (Jalepeno, habanero), finely minced
2½ cups apple juice
2 Tablespoons Vinegar
5 Cups Granulated Sugar
1 Package of Pectin
¾ Cup Water
INSTRUCTIONS
Mix the first four ingredients (Pepper, apple juice, Vinegar, and Sugar) in a sauce pan and set aside.
Mix Pectin And Water ad boil for one minute.
Stir All ingredients together, bring to a boil, reduce heat and stir until sugar is dissolved entirely.
Strain and poor immediately into sterilized jars.
Water bath can according to jelly directions.
