Tomatillo Salsa with Jalapenos

The best American name for this vegetable would probably be “Mexican green tomato”, but they actually taste nothing like regular tomatoes, In fact, the tomatillo is not a tomato at all. The tomatillo has a tart, lemony flavor that is enhance when cooked (especially roasted) and is an excellent base for salsas. While salsa (salsa verde) is the most popular way to enjoy tomatillo, they can be used in other ways. Tomatillos contain high amounts of vitamin A&C. Tomatillos are our #2 sales item!

Ingredients:

6 tomatillos, chopped
1 jalapeno, stemmed and minced
1 clove garlic, minced
1 scallion, chopped
1 small onion, chopped
1 Tbsp. fresh oregano, chopped
2 Tbsp. fresh cilantro, chopped
salt to taste

Instructions:

1. Place the tomatillos, jalapeno and garlic in a food processor or blender and pulse until chunky. Add the remaining ingredients and pulse for 5 seconds.

2. Season the salsa to taste and refrigerate it until ready to use.
Yields 6 servings.
