Sweet and Sour Porkless Bites Stir-Fry
BellaFina™ peppers may be used to create a wide variety of recipes, from appetizers to main dishes. BellaFina peppers are often used in salads, vegetables trays with or without dip, cooked in stews and sauces and stuffed with meat, cheese and grains.
Grown on the vine in the field, BellaFina peppers are a great source of vitamins and nutrients. They are low calorie, fat free, sodium free and high in Vitamin C.
Serves: 3 to 4 servings
1 package Gardein Sweet and Sour Porkless Bites
1 teaspoon olive oil
½ cup diced sweet onion (about half an onion)
pinch of sea salt
2 garlic cloves, minced
3-4 red Bellafina peppers, diced
3-4 green Bellafina peppers, diced
1 cup diced pineapple
2 scallions, sliced
2 tablespoons sesame seeds
3 – 4 cups cooked brown rice, for serving
hot sauce, for serving, optional
Open the package of Sweet and Sour Porkess Bites and place the unopened sauce packet in a bowl of hot water.
Heat the oil in a large pan over medium-high heat. Add the onion and a pinch of sea salt. Cook, stirring frequently for about 5 minutes, until the onion starts to become translucent.
Add the garlic and cook for a minute or two more.
Add the Porkless Bites, the red and green bell pepper, and the pineapple to the pan. Cook for 10 more minutes, stirring frequently.
Remove the pan from the heat and stir in the sauce.
Top with sliced scallions and sesame seeds. Serve with hot sauce (if using) and brown rice.
