Sriracha Chicken Balls

BellaFina™ peppers may be used to create a wide variety of recipes, from appetizers to main dishes. BellaFina peppers are often used in salads, vegetables trays with or without dip, cooked in stews and sauces and stuffed with meat, cheese and grains.

Grown on the vine in the field, BellaFina peppers are a great source of vitamins and nutrients. They are low calorie, fat free, sodium free and high in Vitamin C.

Ingredients

2 lb/ 900g ground chicken/ chicken mince
2-3 red Bellafina peppers, diced
5 spring onions, finely diced
2 carrots, grated
2 eggs
2 tbsp soy sauce
2 tbsp sriracha sauce, plus extra, to serve
1 tbsp chopped fresh parsley
2 cups dry breadcrumbs
salt and pepper

Instructions

In a large bowl, combine all ingredients, adding more breadcrumbs if needed to bring mixture together and be able to form small balls.

Heat a pan over a medium heat, spray some olive oil and cook chicken balls until golden brown all over, for almost 10 minutes. Remove and set aside.

Serve them with some more sriracha sauce on side.
