Sloppy Joe Sweet Potato Breakfast
BellaFina™ peppers may be used to create a wide variety of recipes, from appetizers to main dishes. BellaFina peppers are often used in salads, vegetables trays with or without dip, cooked in stews and sauces and stuffed with meat, cheese and grains.
Grown on the vine in the field, BellaFina peppers are a great source of vitamins and nutrients. They are low calorie, fat free, sodium free and high in Vitamin C.
Yield: 2 servings
1 • medium sweet potato [bite-sized cubes]
1 lb • ground beef
2 • Bellafina peppers [diced]
1/2 • onion [diced]
1 • tomato [diced]
1 • garlic clove [minced]
3 tbps • worcestershire sauce
3 tbsp • ketchup
1 tbsp • spicy mustard
1/2 cup • water
to taste • salt and pepper
to taste • butter
2 • eggs
Put the sweet potato in a small pot and cover with cold water. Place on the stove over a high heat and bring to a boil. Cook for about 10 minutes, or until soft.
Brown the ground beef in a sauté pan, together with the onion, Bellafina peppers and tomato. When done: add the garlic, worcestershire sauce, ketchup, mustard, water, salt and pepper. Cover and simmer until thickened, about 20-25 minutes.
When the sweet potato is soft, drain the water and sear the cubes in a hot pan with some butter and season with salt and pepper.
Top the sweet potato with the sloppy joe and then an egg fried to your liking.
