A South American pepper. Aji is a term used for several different types of this species. Their distinctive flavor rivals that of the Habanero and are used to make extremely hot salsas and sauces.
PEPPERED PEAS AND SAUSAGE
Ingredients:
1 pound of frozen black-eyed peas, thawed 1 large white onion, chopped 1 large green bell pepper, seeded and chopped 1 jalapeno chile, stemmed and chopped 2 Aji Cristal chiles, stemmed, seeded and chopped 3 garlic cloves, minced 1 quart chicken stock 2 bay leaves 1 tsp. white pepper, freshly ground 1 tsp. Mexican oregano 2 Tbsp. olive oil 1/2 cup cilantro, chopped 3-4 links of andouille sausage, sliced into 1/2" slices
Instructions:
Preheat a large pot on medium-high and add oil. Saute the garlic and onion until translucent. Add the peas and stir for another 5 minutes.
Add the chicken stock, bayleaves, oregano and white pepper, and bring to a boil. Reduce the heat to low and stir in all the peppers and sausage. Cover and simmer for 30 minutes or until tender to your taste. Some like them very soft, but al dente is tasty.
Serve with warm French bread or cornbread and salad.
