Raw Veggie Noodle Bowl with Sweet and Sour Miso Sauce
BellaFina™ peppers may be used to create a wide variety of recipes, from appetizers to main dishes. BellaFina peppers are often used in salads, vegetables trays with or without dip, cooked in stews and sauces and stuffed with meat, cheese and grains.
Grown on the vine in the field, BellaFina peppers are a great source of vitamins and nutrients. They are low calorie, fat free, sodium free and high in Vitamin C.
30g/1 oz brown miso paste
1 Tbsp rice vinegar
2 Tbsp toasted sesame oil
1 Tbsp honey
juice of half a lime
salt and pepper.
half a pack of rice noodles (cook according to package instructions)
2 carrots peeled
2 courgettes peeled
¼ red cabbage finely sliced
3-4 red Bellafina peppers sliced thinly
handful of coriander
½ avocado sliced
2 Tbsp hazelnuts chopped
handful of salad leaves
Boil a pan of water and cook the noodles according to the manufacturers directions.
To make the dressing place all the ingredients in a bowl and whisk or use a food processor and blend.
Use a peeler to peel long thin strips from the carrots and courgette.
Slice the cabbage thinly.
Slice the red Bellafina peppers thinly.
Place the drained noodles in the bowl and top with the vegetables.
Drizzle with the miso sauce and garnish with grilled limes.
