Easy Skillet Fajitas

BellaFina™ peppers may be used to create a wide variety of recipes, from appetizers to main dishes. BellaFina peppers are often used in salads, vegetables trays with or without dip, cooked in stews and sauces and stuffed with meat, cheese and grains.

Grown on the vine in the field, BellaFina peppers are a great source of vitamins and nutrients. They are low calorie, fat free, sodium free and high in Vitamin C.

Ingredients

Chicken Marinade:
1 ½ lbs. chicken breast, cut into ¾ inch slices
1 lime, juice
2 T. soy sauce, gluten free
3 T. olive oil
1 T. cumin
1 t. chili powder
1 t. salt
½ t. pepper
½ t. paprika

Vegetables:
6-8 Bellafina peppers, cut into 2-inch long thin slices
1 onion, cut into 2-inch long thin slices
2 T. olive oil
¼ t. salt
¼ t. pepper
1 T. olive oil

Instructions

For the chicken marinade:
In a gallon ziplock freezer bag, place the sliced chicken. In a small bowl, whisk together the lime juice, soy sauce and olive oil. Pour over chicken.

In a separate small bowl, combine cumin, chili powder, 1 t. salt, ½ t. pepper and paprika. Mix to combine and then sprinkle over chicken in bag.
Zip bag and completely coat the chicken by turning the bag and massaging the marinade into the meat. Once completely coated, refrigerate and let marinate for at least 30 minutes (the longer the better!)

For the sautéed vegetables and chicken:
In a large saucepan, drizzle 2 T. olive oil and add chopped bell peppers, onion and ¼ t. salt and pepper.

Cook over medium heat, stirring occasionally, for 7-10 minutes, or until vegetables are tender.

Remove vegetables from the saucepan and set aside.

Add chicken to the saucepan along with 1 T. olive oil. Try not to let too much of the marinade into the pan. Cook chicken for 12-15 minutes over medium heat, or until chicken is done. If you seem to have too much liquid in the pan from excess marinade, drain the juices and continue cooking.
During the last minute of cooking the chicken, add in the sautéed vegetables to warm them up.
